Torr\u00e9faction moyenne-fonc\u00e9e, ax\u00e9e sur la douceur. Les grains d\u00e9caf\u00e9in\u00e9s se torr\u00e9fient diff\u00e9remment. Le proc\u00e9d\u00e9 canne \u00e0 sucre les rend plus poreux, alors ils absorbent la chaleur plus vite et les craquements sont plus difficiles \u00e0 lire. On ralentit la torr\u00e9faction pour compenser, en lui donnant un d\u00e9veloppement r\u00e9gulier qu'une vitesse normale manquerait. L'objectif, c'est de faire ressortir le chocolat et le sucre brun pour lesquels le Chiapas est reconnu, tout en gardant assez de structure pour que la tasse ne tombe pas \u00e0 plat.<\/p>\n<\/div>\n<\/div>\n

Most decaf uses industrial solvents that strip flavor along with caffeine. Le Calme is decaffeinated using ethyl acetate naturally derived from fermented sugarcane \u2014 no chemicals added. The green beans are steamed to open their pores, the caffeine is gently dissolved out, and the beans are dried back down. The caffeine is gone.
